Blueberry Glazed Salmon
Ingredients:
For the Salmon:
🐟 4 salmon fillets
❗ Salt and pepper black to taste
⛽ 1 tablespoon of olive oil
For the Blueberry Frosting:
🍒 1 cup of fresh or frozen blueberries
🍊 1/2 cup orange juice
🍯 1/4 cup of honey
🍇 1 tablespoon balsamic vinegar
🍊 1 teaspoon of orange zest
💡 1 clove of garlic, chopped
🌿 1/4 teaspoon ground cinnamon
🌿 1/4 teaspoon ground ginger
❗ Salt and pepper black to taste
Instrucciones:
1. Prepare the blueberry frosting:
In a medium saucepan, combine blueberries, orange juice, honey, balsamic vinegar, orange zest, minced garlic, cinnamon and ginger.
Bring the mixture to a boil over medium-high heat. Then reduce the heat and slow cook for 10-15 minutes, or until the cranberries burst and the mixture thickens. It comes up every once and a while.
Season with salt and pepper to taste.. Fire removal and reservation.
2. Season the salmon:
Dry salmon fillets with paper towels.
Season both sides with salt and pepper black
3. Cooking the Salmon:
In a large skillet, heat the olive oil over medium-high heat.
Add the salmon fillets to the pan, skin down if you have it.
Cook for 4-5 minutes per side, or until the salmon is well cooked and easily pulled apart with a fork.
Remove the salmon from the pan and place it in a serving dish.
4. Glaze the Salmon:
Generously coat the salmon fillets with the cranberry glaze.
Serves immediately, garnished with extra orange zest if desired.
Tips and Variations:
Cranberry Sauce variation:
For a smoother glaze, mix the cranberry mixture in a blender or food processor until it gets a smoother texture.
Side dishes suggestions:
Serve with roasted Brussels sprouts, wild rice or a fresh green salad for a complete meal.
Flavour Boost:
Add a pinch of red pepper flakes to the cranberry glaze for a touch of heat
