Birthday Cake Oreo Fudge Brownies 🎂🌈

Delight in these decadent brownies that combine rich chocolate layers with vibrant, funfetti fudge, all embellished with Birthday Cake Oreos for a festive treat!

Ingredients:

For the Brownies:
6 oz. bittersweet chocolate (70%), chopped
¾ cup unsalted butter, cubed
¾ cup granulated sugar
½ cup light brown sugar, packed
2 large eggs, room temperature
1 large egg yolk
1 teaspoon pure vanilla extract
¾ cup all-purpose flour
2 tablespoons unsweetened cocoa powder, sifted
¼ teaspoon salt

For the Funfetti Fudge:
3 cups white chocolate chips, divided
1 and ¼ cup (14 oz) sweetened condensed milk, divided
½ cup rainbow sprinkles + more for topping
Pink gel food coloring
4 Birthday Cake Oreos, chopped
Topping:

½ bag Pink Candy Melts, for drizzling (optional)


Instructions:
Prepare the Brownies:

Preheat Oven: Set your oven to 350°F (177°C). Line a 9×9-inch square baking pan with foil or parchment and grease it.
Melt Chocolate and Butter: Use a double boiler to melt the chocolate and butter together. Once melted, whisk in both sugars until smooth.
Combine Wet Ingredients: Add eggs, egg yolk, and vanilla to the chocolate mixture, stirring just until combined.
Add Dry Ingredients: Fold in flour, cocoa powder, and salt to the wet mixture.
Layer: Pour half the brownie batter into the prepared pan. Place 16 Birthday Cake Oreos evenly over the batter. Cover with the remaining batter.
Bake: Place in the oven and bake for 25-30 minutes, or until a toothpick comes out clean. Allow to cool completely in the pan.
Make the Funfetti Fudge:

Prepare Ingredients: Divide the white chocolate chips and sweetened condensed milk between two microwave-safe bowls. Microwave each until the chocolate is melted and the mixture is smooth.
Color and Layer: Tint one batch with pink food coloring. Spread the pink fudge over the cooled brownies. Chill to set.
Add Sprinkles and Oreos: Fold rainbow sprinkles into the second batch of fudge. Spread over the pink layer. Press chopped Oreos and extra sprinkles into the top. Chill until set.
