Bananas Foster French Toast with Banana Bread
Ingredients:
-For the Banana Bread:
3 ripe bananas, mashed
1/2 cup unsalted butter, melted
1/2 cup granulated sugar
1/4 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 and 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
-For the French Toast:
8 slices of homemade banana bread
4 large eggs
1/2 cup milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Butter, for cooking
-For the Bananas Foster Topping:
1/4 cup unsalted butter
1/2 cup brown sugar, packed
1/4 cup dark rum
2 ripe bananas, sliced
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Vanilla ice cream, for serving (optional)
Directions:
1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
2. In a large mixing bowl, combine the mashed bananas, melted butter, granulated sugar, brown sugar, egg, and vanilla extract. Mix until well combined.
3. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
4. Pour the batter into the prepared loaf pan and spread it out evenly. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
5. Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
6. Once cooled, slice the banana bread into thick slices, about 1 inch thick.
7. In a shallow dish, whisk together the eggs, milk, vanilla extract, cinnamon, and nutmeg to make the French toast batter.
8. Heat a skillet or griddle over medium heat and melt a pat of butter.
9. Dip each slice of banana bread into the French toast batter, coating both sides evenly.
