Cheesy Chicken Quesadillas
Ingredients:
2 tablespoons olive oil
1 lb chicken breast, diced
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
Salt and pepper to taste
1 red bell pepper, diced
1 green bell pepper, diced
1 small onion, finely chopped
2 cups shredded cheddar cheese
8 large flour tortillas
Fresh cilantro, chopped (for garnish)
Sour cream and salsa (for serving)


Directions:
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced chicken, chili powder, cumin, garlic powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, heat the remaining tablespoon of olive oil. Add the diced bell peppers and onion. Cook until the vegetables are tender, about 5 minutes.
Remove the vegetables from the skillet and set aside. Wipe the skillet clean.
To assemble the quesadillas, place a tortilla on a flat surface. Sprinkle with 1/4 cup of shredded cheddar cheese, followed by a portion of the cooked chicken and vegetables. Top with another 1/4 cup of shredded cheese. Place another tortilla on top.
Heat the skillet over medium heat. Place the assembled quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
Remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and garnish with fresh chopped cilantro.
Serve the quesadillas hot, with sour cream and salsa on the side.
