Savory One Pot Taco Pasta
Ingredients:
1 pound lean ground beef or turkey
1 small onion, finely diced
2 cloves garlic, minced
1 packet taco seasoning mix
1 can (14.5 ounces) diced tomatoes, with juices
1/4 cup diced green bell pepper or diced green chilies
2 cups low-sodium chicken broth
8 ounces medium pasta shells
1 cup shredded reduced-fat Mexican blend cheese
Optional toppings: diced tomatoes, sliced green onions, low-fat sour cream, chopped cilantro


Directions:
Heat a large pot over medium heat. Add ground beef or turkey, cooking and crumbling until browned, about 5-7 minutes.
Add diced onion, garlic, and bell pepper, cooking until softened, around 5 minutes.
Sprinkle taco seasoning over the meat and stir to coat.
Add diced tomatoes with juices and chicken broth.
Bring to a boil, then add pasta. Reduce heat to a simmer, cooking for 12-15 minutes.
Stir in shredded cheese until melted. Season with salt and pepper.
Serve hot with optional toppings.
