🌮 Zesty Mexican Taco Meatloaf 🥩
📋 Ingredients:
1 pound (450g) ground beef
1/2 cup (60g) breadcrumbs
1/4 cup (60ml) milk
1 packet (1 ounce) taco seasoning mix
1 cup (100g) shredded cheddar cheese
1/2 cup (120ml) salsa
1/4 cup (60ml) chopped cilantro
1/4 cup (60ml) sour cream
1/4 cup (60ml) taco sauce
1 avocado, diced
Salt and pepper to taste


📝 Instructions:
1️⃣ Preheat your oven to 375°F (190°C). Grease a loaf pan with cooking spray.
2️⃣ In a large mixing bowl, combine the ground beef, breadcrumbs, milk, and taco seasoning mix. Mix until well combined.
3️⃣ Press half of the meat mixture into the bottom of the prepared loaf pan, creating an even layer.
4️⃣ Sprinkle the shredded cheddar cheese over the meat layer, then spread the salsa evenly on top.
5️⃣ Sprinkle the chopped cilantro over the salsa layer, then spread the remaining meat mixture on top, pressing it down gently.
6️⃣ Bake the meatloaf in the preheated oven for 45-50 minutes, or until cooked through and the top is golden brown.
7️⃣ While the meatloaf is baking, prepare the taco sauce by mixing the sour cream and taco sauce together in a small bowl.
8️⃣ Remove the meatloaf from the oven and let it cool for a few minutes before slicing.
9️⃣ Serve slices of the Mexican taco meatloaf topped with diced avocado and a drizzle of the taco sauce mixture.
