White BBQ Chicken Subs
Tangy White BBQ Chicken Sub Sandwiches
Ingredients:
White BBQ Sauce:
1/2 cup mayonnaise
2 tbsp white vinegar
1/2 tbsp fresh cracked white pepper
1/2 tbsp Creole mustard
1/2 tsp salt
2 tbsp sugar
2 large garlic cloves, pressed
2 tsp horseradish
1 tbsp lemon juice
1/2 tsp paprika
Sandwich:
14 oz chicken tenders
2 tbsp vegetable oil
Salt and pepper
2 large shallots, sliced
1 1/2 cups shredded Monterey Jack cheese
2 French bread subs
About 1/2 cup white BBQ sauce
Directions:
Mix all ingredients for the white BBQ sauce and refrigerate until ready to use.
Cook chicken tenders in a sauté pan with vegetable oil, seasoning with salt and pepper. Add the sliced shallots halfway through cooking.
Let chicken tenders cool until they can be handled. Chop chicken and place it in a mixing bowl.
Add the cooked shallots, 1 cup of shredded Monterey Jack cheese, and about 1/2 cup of white BBQ sauce to the chicken. Mix well.
Slice the French bread subs in the middle to create a pocket (don’t cut all the way through).
Divide the chicken mixture between the subs, stuffing them generously.
Sprinkle the remaining 1/2 cup of shredded Monterey Jack cheese over the top of the chicken mixture.
Place the subs on a baking sheet and broil until the cheese is melted and bubbly.
Serve immediately and enjoy the tangy and savory flavors of the white BBQ chicken subs.
