Tropical Bliss: Macadamia-Crusted Halibut in a Creamy Coconut Embrace
Ingredients:
4 halibut fillets (about 6 ounces each)
1 cup macadamia nuts, finely chopped
1 cup panko breadcrumbs
1 egg, beaten
1 cup all-purpose flour
1 cup coconut milk
1 tablespoon coconut oil
1 lime, juiced and zested
1 teaspoon garlic powder
Salt and pepper to taste
Fresh cilantro for garnish
Directions:
Preheat oven to 375°F (190°C).
Season the halibut fillets with salt, pepper, and garlic powder.
Dredge each fillet in flour, dip in beaten egg, and coat with a mixture of macadamia nuts and panko breadcrumbs.
Heat coconut oil in a skillet over medium heat and sear each fillet for about 2 minutes per side until golden.
Transfer the fillets to a baking dish and bake for 10-12 minutes.
In a small saucepan, bring coconut milk to a simmer, add lime juice and zest, and reduce for about 5 minutes until thickened.
Serve the halibut drizzled with coconut sauce and garnished with fresh cilantro.
