Traditional French Beef Stew
Ingredients:
3 lbs beef chuck, cut into 2-inch cubes
Salt and black pepper, to taste
2 tbsp olive oil
8 oz bacon, chopped
1 large onion, chopped
2 carrots, sliced
3 cloves garlic, minced
2 tbsp all-purpose flour
2 cups beef broth
1 tbsp tomato paste
1 tsp fresh thyme, chopped
2 bay leaves
8 oz pearl onions, peeled
8 oz mushrooms, sliced
Fresh parsley, chopped (for garnish)
Directions:
Preheat oven to 350°F (175°C).
Season the beef with salt and black pepper. Heat olive oil in a large Dutch oven over medium-high heat. Add the beef in batches, browning on all sides. Remove and set aside.
In the same pot, add bacon and cook until crispy. Remove and set aside.
Add chopped onion and carrots to the pot, cooking until the onion is translucent. Add garlic and cook for another minute.
Sprinkle flour over the vegetables and stir well.
Return beef and bacon to the pot. Add beef broth, tomato paste, thyme, and bay leaves. Bring to a boil.
Cover the pot and transfer to the oven. Cook for 2 hours.
After 2 hours, add pearl onions and mushrooms. Cook for another 30 minutes, or until the beef is tender.
Remove from oven, discard bay leaves, and garnish with fresh parsley before serving.
