📋 Ingredients:
1 cup cooked rice (white or brown)
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels (fresh, frozen, or canned)
1 bell pepper, diced
1 small onion, diced
1 zucchini, diced
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper to taste
1 avocado, sliced
1/2 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
1/4 cup salsa
4 large flour tortillas


📝 Instructions:
1️⃣ Heat olive oil in a large skillet over medium heat. Add diced onion, bell pepper, and zucchini. Cook until softened, about 5-7 minutes.
2️⃣ Add cooked rice, black beans, corn kernels, ground cumin, chili powder, salt, and pepper to the skillet. Stir to combine and cook for an additional 2-3 minutes until heated through.
3️⃣ Warm the flour tortillas in a separate skillet or in the microwave for a few seconds to make them pliable.
4️⃣ Place a spoonful of the veggie and rice mixture onto the center of each tortilla.
