1 pound ground beef
4 large potatoes, diced

2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup beef broth
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
Fresh cilantro, chopped (for garnish)
Sliced green onions (for garnish)
Sliced jalapeños (optional, for extra heat)
Instructions:
Cook the Ground Beef: In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat.
Add Vegetables: Add the diced potatoes, onion, red bell pepper, and garlic to the skillet. Cook, stirring occasionally, until the vegetables begin to soften, about 5-7 minutes.
