Spicy Crispy Chicken Delight
Ingredients:
500g chicken breast, cut into bite-sized pieces
1 egg
1/2 cup cornflour
1/4 cup plain flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp black pepper
1 red bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
3 cloves garlic, minced
1 inch ginger, minced
3 tbsp sweet chilli sauce
2 tbsp soy sauce
1 tbsp ketchup
1 tbsp rice vinegar
1 tbsp sugar
1 tsp sesame oil
2 spring onions, chopped
Vegetable oil for frying


Directions:
In a bowl, beat the egg and set aside. In another bowl, mix cornflour, plain flour, baking powder, salt, and black pepper.
Dip the chicken pieces into the egg, then coat them in the flour mixture.
Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken pieces until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.
In another pan, heat sesame oil over medium heat. Add minced garlic and ginger, sauté until fragrant.
Add the sliced onion, red bell pepper, and green bell pepper. Stir-fry for 3-4 minutes until they start to soften.
In a small bowl, mix sweet chilli sauce, soy sauce, ketchup, rice vinegar, and sugar. Pour the sauce into the pan with the vegetables.
Add the fried chicken pieces to the pan, tossing to coat them evenly with the sauce. Cook for another 2-3 minutes until everything is well combined.
Garnish with chopped spring onions and serve hot.
