Southern-Style Shrimp and Creamy Grits
Ingredients:
1 pound shrimp, peeled and deveined
1 cup grits
4 cups water or chicken broth
1 cup shredded cheddar cheese
4 slices bacon, chopped
1 small onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced
1 tablespoon butter
1/4 cup heavy cream
Salt and pepper to taste
1 teaspoon paprika
1/2 teaspoon cayenne pepper
Fresh parsley for garnish
Directions:
In a large pot, bring water or chicken broth to a boil. Slowly add the grits, stirring constantly to avoid lumps. Reduce heat and simmer, covered, for 20-25 minutes, stirring occasionally, until thickened.
Stir in cheddar cheese, butter, and heavy cream. Season with salt and pepper to taste. Keep warm.
In a large skillet, cook bacon over medium heat until crispy. Remove bacon and set aside, leaving the bacon fat in the skillet.
Add chopped onion and bell pepper to the skillet and cook until softened, about 5 minutes. Add garlic and cook for another minute.
Add shrimp to the skillet and season with paprika, cayenne pepper, salt, and pepper. Cook until shrimp are pink and opaque, about 3-4 minutes.
Return bacon to the skillet and stir to combine.
Serve shrimp mixture over the cheesy grits. Garnish with fresh parsley.
