Ingredients:
2 lbs beef stew meat, cubed
2 tablespoons olive oil
4 carrots, sliced
4 potatoes, diced
1 onion, chopped
3 cloves garlic, minced
3 cups beef broth
1 can (14.5 oz) diced tomatoes, undrained
1 cup frozen peas
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 bay leaves
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Brown the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the beef cubes and brown on all sides. Transfer the browned beef to the slow cooker.
Prep the Veggies: Add the sliced carrots, diced potatoes, chopped onion, and minced garlic to the slow cooker.
Add the Liquids: Pour in the beef broth, diced tomatoes, and tomato paste. Stir in the Worcestershire sauce, dried thyme, dried rosemary, bay leaves, salt, and pepper.
