Savory Pan-Grilled Cod with Paprika, Olives & Garlic
Ingredients:
4 cod fillets
1 tablespoon sweet paprika
1 teaspoon smoked paprika
1/4 cup olive oil
4 cloves garlic, thinly sliced
1/2 cup green olives, sliced
1/4 cup chopped fresh parsley
Salt and pepper to taste
Lemon wedges, for serving
Directions:
In a small bowl, mix the sweet paprika, smoked paprika, salt, and pepper.
Rub the cod fillets with the paprika mixture and let them sit for 10 minutes to absorb the flavors.
Heat the olive oil in a large skillet over medium heat.
Add the sliced garlic and cook for about 1 minute, or until fragrant.
Place the cod fillets in the skillet and cook for 3-4 minutes on each side, until the fish is opaque and flakes easily with a fork.
Add the sliced olives and chopped parsley to the skillet, cooking for an additional 1-2 minutes.
Serve the cod fillets hot, garnished with lemon wedges.
