Savory Garlic Butter Steak Bites with Creamy Cheesy Smashed Potatoes
Ingredients:
For the Steak Bites:
1 lb sirloin steak, cut into bite-sized pieces
2 tbsp olive oil
4 cloves garlic, minced
2 tbsp butter
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
For the Cheesy Smashed Potatoes:
1 1/2 lbs potatoes (such as Yukon Gold), peeled and quartered
Salt for boiling water
4 tbsp butter
1/4 cup milk
1/2 cup shredded cheddar cheese
Salt and pepper to taste
Chives, chopped (for garnish)
Directions:
For the Steak Bites:
Season the steak bites with salt and pepper on all sides.
In a large skillet, heat olive oil over medium-high heat. Add the steak bites and cook for 2-3 minutes on each side, or until browned and cooked to desired doneness. Remove the steak from the skillet and set aside.
In the same skillet, add butter and minced garlic. Cook for 1-2 minutes until fragrant.
Return the cooked steak bites to the skillet and toss to coat them evenly with the garlic butter.
Garnish with chopped fresh parsley before serving.
For the Cheesy Smashed Potatoes:
Place the quartered potatoes in a large pot and cover with cold water. Add a generous pinch of salt to the water.
Bring the water to a boil over medium-high heat. Reduce the heat to medium-low and simmer the potatoes for 15-20 minutes, or until fork-tender.
Drain the potatoes and return them to the pot. Add butter and milk to the pot and mash the potatoes until smooth and creamy.
Stir in shredded cheddar cheese until melted and well combined. Season with salt and pepper to taste.
Serve the cheesy smashed potatoes warm, garnished with chopped chives.
