Savory Cowboy Butter Steak Tacos
Ingredients:
For the steak:
1 lb flank steak
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp smoked paprika
1/2 tsp garlic powder
For the cowboy butter:
1/2 cup unsalted butter, melted
2 cloves garlic, minced
1 tbsp Dijon mustard
1 tbsp lemon juice
1/4 cup chopped fresh parsley
1/2 tsp red pepper flakes
1/2 tsp smoked paprika
Salt and pepper to taste
For the tacos:
8 small flour tortillas
1 cup shredded lettuce
1/2 cup diced tomatoes
1/4 cup sliced red onions
1/4 cup chopped cilantro
Lime wedges for garnish
Directions:
Preheat your grill to high heat. Brush the flank steak with olive oil and season with salt, black pepper, smoked paprika, and garlic powder.
Grill the steak for 4-5 minutes per side, or until it reaches your desired level of doneness. Remove from the grill and let it rest for 5 minutes before slicing thinly against the grain.
In a small bowl, combine the melted butter, garlic, Dijon mustard, lemon juice, parsley, red pepper flakes, smoked paprika, salt, and pepper. Stir well to make the cowboy butter.
Warm the flour tortillas on the grill for about 30 seconds on each side.
To assemble the tacos, place slices of steak on each tortilla. Drizzle with cowboy butter, then top with shredded lettuce, diced tomatoes, sliced red onions, and chopped cilantro.
Serve with lime wedges on the side for an extra burst of flavor.
