Savory Breakfast Roll-Ups with Sausage, Egg, and Cheese
Ingredients:

4 large flour tortillas
4 breakfast sausages
4 large eggs
1/2 cup shredded cheddar cheese
1/4 cup milk
Salt and pepper to taste
1 tablespoon butter
2 tablespoons chopped chives (optional)


Directions:

In a medium skillet over medium heat, cook the breakfast sausages until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
In a bowl, whisk together the eggs, milk, salt, and pepper.
In the same skillet, melt the butter over medium heat. Pour in the egg mixture and cook, stirring frequently, until the eggs are scrambled and just set.
Warm the tortillas in a dry skillet or microwave until pliable.
To assemble, place one sausage on each tortilla, followed by a quarter of the scrambled eggs and a sprinkle of cheddar cheese.
Roll up the tortillas tightly around the filling, tucking in the ends to secure.
Place the roll-ups back in the skillet seam-side down and cook over medium heat until the tortillas are golden brown and crispy, about 2-3 minutes per side.
Cut each roll-up in half and garnish with chopped chives if desired.
