Roast Chicken with Homemade Gravy
Just roasted a perfect chicken for Sunday dinner! Nothing beats the taste of homemade gravy. 🍗🥘
Recipe
Ingredients:
1 whole chicken (about 4-5 lbs)
1 lemon, halved
4 sprigs of rosemary
4 cloves garlic, smashed
2 tablespoons olive oil
Salt and pepper to taste
2 tablespoons all-purpose flour
2 cups chicken broth
1 teaspoon dried thyme
Directions:
Preheat your oven to 400°F (200°C).
Prepare the chicken by patting it dry with paper towels. Season the cavity with salt and pepper, and stuff with lemon halves, rosemary, and garlic.
Rub the outside of the chicken with olive oil, then season generously with salt and pepper.
Place the chicken breast side up in a roasting pan and roast for 1 to 1.5 hours, or until the juices run clear when you cut between a leg and thigh.
Remove the chicken from the oven and let it rest while you prepare the gravy.
Place the roasting pan on your stove over medium heat. Sprinkle flour over the pan juices and cook, stirring, for about 2 minutes.
Gradually add chicken broth and thyme, scraping up any browned bits from the pan. Simmer until the gravy thickens, about 4-5 minutes.
Strain the gravy and serve with the sliced chicken.
