Pan-Seared Mediterranean Cod with Tomato Basil Sauce:

Ingredients:
– 🐟 Cod fillets
– 🍅 Diced tomatoes
– 🌿 Fresh basil
– 🧄 Garlic cloves
– 🧅 Onion
– 🍋 Lemon wedge
– 🥬 Spinach
– 🫒 Black olives
– 🧂 Salt and pepper
– 🧈 Olive oil

Instructions:
1. Prep: 🧅 Dice onion, 🧄 mince garlic, and 🌿 chop basil.
2. Sear Cod: 🐟 Season cod with 🧂 salt and pepper. Heat 🧈 olive oil in a pan, sear cod 3-4 min each side. Remove and set aside.
3. Make Sauce: In the same pan, sauté 🧅 onion and 🧄 garlic until fragrant. Add 🍅 tomatoes and cook until soft. Stir in 🌿 basil.
4. Combine: Return cod to pan, spoon sauce over top. Simmer for a few minutes.
5. Serve: Plate cod, garnish with 🍋 lemon wedge, serve with sautéed 🥬 spinach and 🫒 olives.
