Oven Baked Turkey Zucchini Meatballs
Ingredients:
1 pound ground turkey
1 cup grated zucchini
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped parsley
1 egg
2 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
Olive oil spray
Directions:
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, combine ground turkey, grated zucchini, breadcrumbs, Parmesan cheese, parsley, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
Form the mixture into meatballs, about 1-2 inches in diameter, and place them on the prepared baking sheet.
Lightly spray the meatballs with olive oil spray.
Bake for 20-25 minutes, or until the meatballs are golden brown and cooked through.
