Decadent Mini Peanut Butter Pies with Chocolate and Reese’s Topping
Ingredients:
1 1/2 cups graham cracker crumbs
1/2 cup melted butter
1/4 cup granulated sugar
1 cup creamy peanut butter
1 cup powdered sugar
8 oz cream cheese, softened
1 cup heavy whipping cream
1 teaspoon vanilla extract
1/2 cup chocolate chips
1 tablespoon coconut oil
1/2 cup mini Reese’s cups, chopped
Directions:
In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottoms of a mini muffin tin to form the crusts.
In a large bowl, beat the peanut butter, powdered sugar, and cream cheese until smooth and creamy.
In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form. Gently fold the whipped cream into the peanut butter mixture until well combined.
Spoon the peanut butter filling into the prepared crusts, smoothing the tops with a spatula.
Melt chocolate chips and coconut oil together in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth. Drizzle the melted chocolate over the mini pies.
Top each mini pie with chopped Reese’s cups.
Refrigerate the mini pies for at least 2 hours before serving.
