Mini Fruity Pebbles Cheesecakes 🎉✨
Mini cheesecakes that turn nostalgic cereal into a dreamy dessert.
Ingredients:
For the Cups:
Cooking spray
1/2 cup (1 stick) butter
1 (10-oz.) package mini marshmallows
6 cups Fruity Pebbles cereal, plus more for garnish, crushed
For the Cheesecake Filling:
1 (8-oz.) block cream cheese, softened
1/4 cup granulated sugar
2 tablespoons white chocolate, melted
2 tablespoons heavy cream
4 oz. Cool Whip
Directions:
Prepare the Cups:
Grease two 12-cup muffin tins and the bottom of a shot glass with cooking spray.
In a large saucepan over medium heat, melt the butter and marshmallows, stirring occasionally.
Remove from heat and stir in the cereal quickly.
Divide the mixture among 16 muffin cups, pressing down with the greased shot glass to create wells. Chill in the refrigerator for 15 minutes before removing.
Make the Cheesecake Filling:
In a large bowl, use a hand mixer to beat the cream cheese, sugar, melted white chocolate, and heavy cream until smooth.
Fold in Cool Whip until combined.
Assemble the Cheesecakes:
Spoon the cheesecake mixture into the prepared Fruity Pebbles cups.
Garnish with additional crushed Fruity Pebbles.
