Mexican Street Corn 🌽🌶️🧀
📋 Ingredients:
4 ears of fresh corn, husked
1/4 cup mayonnaise
1/4 cup sour cream
1/2 cup crumbled cotija cheese
1 teaspoon chili powder
1/4 cup chopped fresh cilantro (optional)
1 lime, cut into wedges
Salt and pepper, to taste


📝 Instructions:
1️⃣ Preheat grill to medium-high heat.
2️⃣ Place the husked corn on the grill and cook, turning occasionally, until kernels are lightly charred, about 10-12 minutes.
3️⃣ In a small bowl, mix together mayonnaise and sour cream until well combined.
4️⃣ Brush the grilled corn with the mayonnaise-sour cream mixture, coating all sides.
5️⃣ Sprinkle crumbled cotija cheese over the corn, then dust with chili powder.
6️⃣ Garnish with chopped fresh cilantro, if desired.
7️⃣ Serve Mexican street corn hot with lime wedges on the side for squeezing.
8️⃣ Season with salt and pepper to taste.
