Loaded Potato Ranch Chicken Casserole 🥔🍗🧀
📋 Ingredients:
1 1/2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
6 cups diced potatoes (about 4 medium potatoes)
1/4 cup olive oil
1 packet (1 ounce) ranch seasoning mix
Salt and pepper to taste
1 cup shredded cheddar cheese
1/2 cup cooked and crumbled bacon
1/4 cup chopped green onions
Sour cream for serving (optional)
📝Instructions:
1️⃣ Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish.
2️⃣ In a large mixing bowl, combine diced potatoes, olive oil, and ranch seasoning mix. Toss until the potatoes are evenly coated.
3️⃣ Spread the seasoned potatoes in an even layer in the prepared baking dish.
4️⃣ In the same mixing bowl, add the chicken pieces. Season with salt and pepper to taste, then toss to coat with any remaining ranch seasoning mixture.
5️⃣ Arrange the seasoned chicken pieces over the top of the potatoes in the baking dish.
6️⃣ Bake in the preheated oven for 40-45 minutes, or until the chicken is cooked through and the potatoes are tender, stirring halfway through.
7️⃣ During the last 5 minutes of baking, sprinkle shredded cheddar cheese and crumbled bacon over the top of the casserole.
8️⃣ Remove from the oven and let the casserole cool for a few minutes before serving.
9️⃣ Garnish with chopped green onions and serve with sour cream on the side if desired.
