Lemon Herb Grilled Chicken Skewers
Ingredients:
1.5 lbs (680g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
2 tablespoons olive oil
Zest and juice of 1 large lemon
3 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
1 teaspoon salt
1/2 teaspoon black pepper
Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes before using)
Instructions:
Marinate the Chicken:
In a large bowl, combine olive oil, lemon zest, lemon juice, minced garlic, chopped parsley, thyme, rosemary, salt, and black pepper.
Add the chicken pieces to the bowl and toss to coat them evenly in the marinade. Cover and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
Preheat the Grill:
Preheat your grill to medium-high heat. If you’re using a stovetop grill pan, heat it over medium-high heat.
Prepare the Skewers:
Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece to ensure even cooking.
Grill the Skewers:
Lightly oil the grill grates to prevent sticking.
Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F (74°C).
Serve:
Once cooked, remove the skewers from the grill and let them rest for a few minutes.
Garnish with extra fresh herbs and serve with lemon wedges for a burst of fresh flavor.
