Lemon Blueberry Tiramisu
Refreshing Lemon Blueberry Tiramisu Delight
Ingredients:
1 package ladyfingers (about 24)
1 cup fresh blueberries
1/2 cup lemon juice
1/2 cup sugar
1 tablespoon lemon zest
8 oz mascarpone cheese
1 cup heavy whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
2 tablespoons blueberry preserves
Fresh blueberries and lemon slices for garnish
Directions:
In a small saucepan, combine lemon juice, sugar, and lemon zest. Heat over medium heat until sugar is dissolved. Let cool.
In a large bowl, beat mascarpone cheese until smooth. In a separate bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Gently fold the whipped cream into the mascarpone.
Dip each ladyfinger into the lemon syrup and arrange a layer in the bottom of an 8×8-inch dish.
Spread half of the mascarpone mixture over the ladyfingers. Sprinkle with half of the fresh blueberries.
Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture. Top with the remaining blueberries.
In a small bowl, combine blueberry preserves with a little water to thin it out. Drizzle over the top of the tiramisu.
Cover and refrigerate for at least 4 hours or overnight for best results.
Garnish with fresh blueberries and lemon slices before serving.
