Ingredients:
• 1 pre-made pie crust
• 1 cup coconut milk
• 1 cup whole milk
• 1/2 cup granulated sugar
• 1/4 cup cornstarch
• 1/4 teaspoon salt
• 2 eggs
• 1 teaspoon vanilla extract
• 1 cup shredded coconut
• 2 ripe peaches, thinly sliced


Directions:
. Preheat oven to 350°F (175°C). Place the pre-made pie crust in a pie dish and crimp edges. Bake for 10-12 minutes until lightly golden. Set aside to cool.
. In a saucepan, combine coconut milk, whole milk, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly, until the mixture thickens.
. In a separate bowl, beat eggs. Slowly pour the hot milk mixture into the eggs, whisking constantly to temper the eggs. Return the mixture to the saucepan and cook for an additional 2-3 minutes until thickened.
. Remove from heat and stir in vanilla extract and shredded coconut. Pour the coconut pudding mixture into the cooled pie crust. Allow to cool for 10-15 minutes, then refrigerate for at least 2 hours until set.
