Classic Homemade Donuts with Vanilla Glaze

Ingredients:

2 and 1/4 cups all-purpose flour
1/2 cup granulated sugar
1 teaspoon salt
2 teaspoons active dry yeast
1/2 cup warm milk (110°F)
1/4 cup unsalted butter, melted
2 large eggs
1/2 teaspoon vanilla extract
Vegetable oil, for frying
For Vanilla Glaze:

2 cups powdered sugar
1/4 cup milk
1 teaspoon vanilla extract

Directions:

In a large bowl, combine 1 cup flour, sugar, salt, and yeast. Add warm milk and melted butter. Mix until well combined.
Add eggs and vanilla extract, mixing well.
Gradually add remaining flour, mixing until dough comes together.
Knead dough on a floured surface for 5-7 minutes until smooth and elastic.
Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
Punch down dough and roll out on a floured surface to 1/2-inch thickness. Cut out donuts using a donut cutter or two round cookie cutters (one larger, one smaller for the hole).
Place cut donuts on a floured baking sheet, cover, and let rise for 30 minutes.
Heat vegetable oil in a deep fryer or large pot to 375°F (190°C).
Fry donuts, a few at a time, for about 1-2 minutes per side until golden brown. Remove with a slotted spoon and drain on paper towels.
For the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth. Dip each donut into the glaze and let excess drip off. Place on a wire rack to set.
