Healthy Low-Carb Sautéed Zucchini and Mushroom Medley
Ingredients:

2 medium zucchini, sliced into rounds
8 oz mushrooms, sliced
2 cloves garlic, minced
2 tbsp olive oil
Salt and pepper to taste
Fresh parsley, chopped (for garnish)


Directions:

Heat olive oil in a large skillet over medium heat.
Add minced garlic to the skillet and sauté for 1 minute until fragrant.
Add sliced mushrooms to the skillet and cook for 5-7 minutes until they begin to release their juices and turn golden brown.
Add sliced zucchini to the skillet and season with salt and pepper to taste. Cook for an additional 5-7 minutes until the zucchini is tender but still slightly crisp.
Remove the skillet from heat and transfer the sautéed zucchini and mushrooms to a serving dish.
Garnish with freshly chopped parsley before serving.
