Ground Beef with Potatoes

Savory Ground Beef and Potato Skillet

Ingredients:

1 lb ground beef
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 potatoes, peeled and diced
1 teaspoon paprika
1 teaspoon dried thyme
Salt and pepper to taste
1/2 cup beef broth
1 cup frozen peas
Chopped fresh parsley for garnish


Directions:

In a large skillet, heat olive oil over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon.
Add diced onion and minced garlic to the skillet. Cook until onion is translucent.
Stir in diced potatoes, paprika, thyme, salt, and pepper. Cook for 5-7 minutes, until potatoes are slightly tender.
Pour beef broth into the skillet. Bring to a simmer, then cover and cook for 10-12 minutes, or until potatoes are fully cooked and tender.
Stir in frozen peas and cook for an additional 2-3 minutes, until peas are heated through.
Remove from heat. Garnish with chopped parsley before serving.
