Ingredients:
Cake Roll:
1 cup all-purpose flour
1 tsp baking powder
½ tsp salt
4 large eggs (room temperature)
¾ cup granulated sugar
2 tbsp vegetable oil
2 tbsp buttermilk
1 tsp apple cider vinegar
1 tsp vanilla extract
Gel food coloring: black, purple, teal, blue
Filling:
4 oz cream cheese (softened)
1 cup powdered sugar
2 cups cool whip
Chocolate Ganache:
½ cup heavy whipping cream
1 cup semi-sweet chocolate chips
Black gel food coloring
Directions:
Preheat Oven: Preheat to 350°F. Line a 15×10 jelly roll pan with parchment paper and spray with non-stick cooking spray.
Mix Dry Ingredients: Combine flour, baking powder, and salt in a small bowl.
Prepare Batter: Beat eggs on high for 3 mins. Gradually add sugar, then oil, buttermilk, vinegar, and vanilla. Lightly beat in flour mixture.
Color Batter: Divide batter into 4 bowls, add food coloring to each.
Bake: Drizzle colors into the pan, swirl, and bake for 12-13 mins.
Roll Cake: Turn baked cake onto a towel dusted with powdered sugar, roll up, and cool.
Make Filling: Beat cream cheese and powdered sugar until fluffy, then fold in cool whip.
Fill Cake: Unroll cake, spread filling, and re-roll. Chill in the fridge.
Prepare Ganache: Heat cream, add food coloring, pour over chocolate chips, and mix until smooth. Cool.
Top Cake: Pour ganache over the cake roll, add sprinkles, and chill before slicing.
