Delicate Cod Fillets in a Tangy White Lemon Caper Sauce
Ingredients:
– 4 cod fillets (approximately 6 ounces each)
– Salt and pepper to your liking
– 2 tablespoons of olive oil
– 1/4 cup of finely chopped shallots
– 2 cloves of garlic, minced
– 1/2 cup of chicken broth
– Juice from 1 lemon
– 2 tablespoons of rinsed capers
– 2 tablespoons of unsalted butter
– Chopped fresh parsley for garnish
Instructions:
1. Season the cod fillets with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat.
3. Add the cod and sear until it turns golden brown, approximately 4 minutes on each side. Remove the cod from the skillet and set aside.
4. In the same skillet, add shallots and garlic, and sauté until they become soft and translucent, about 2 minutes.
5. Pour in the chicken broth and let it reduce for about 5 minutes until it starts to thicken slightly.
6. Stir in the lemon juice and capers.
7. Return the cod to the skillet and let it simmer for another 2-3 minutes, or until the fish is thoroughly cooked.
8. Remove from heat and stir in the butter until it melts and the sauce becomes creamy.
9. Serve the cod fillets garnished with chopped fresh parsley.
