Crispy Chicken Bites
Ingredients:
1 lb chicken breast, cut into bite-sized pieces
1 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs (panko or regular)
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
Vegetable oil, for frying


Directions:

Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
Dredge each chicken piece in flour, shaking off the excess, then dip into the egg mixture, and finally coat thoroughly with the breadcrumb mixture.
Heat vegetable oil in a large skillet over medium heat. Fry the chicken nuggets in batches, turning occasionally, until golden brown and crispy, about 3-4 minutes per side.
Transfer the cooked nuggets to a paper towel-lined plate to drain excess oil. Serve warm with your favorite dipping sauce.
