Ingredients:

1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 medium onion, sliced
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
1/2 cup chicken broth
1/4 cup soy sauce
1/4 cup heavy cream
2 tablespoons cornstarch mixed with 2 tablespoons water (for thickening)
1 tablespoon honey
1 tablespoon rice vinegar
1/4 teaspoon red pepper flakes (optional, for heat)
Fresh cilantro, chopped (for garnish)
Cooked rice or noodles (for serving)

Directions:

Step 1: Sauté the Vegetables
In a large skillet or wok, heat the olive oil over medium-high heat. Add the sliced bell peppers, onion, garlic, and ginger. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.

Step 2: Cook the Shrimp
Add the shrimp to the skillet and cook, stirring occasionally, until the shrimp are pink and cooked through, about 3-4 minutes. Remove the shrimp and vegetables from the skillet and set aside.

Step 3: Prepare the Sauce
In the same skillet, add the chicken broth, soy sauce, heavy cream, honey, and rice vinegar. Bring to a simmer and cook for 2 minutes. Stir in the cornstarch mixture and continue to cook, stirring constantly, until the sauce has thickened.

Step 4: Combine and Serve
Return the cooked shrimp and vegetables to the skillet. Toss to coat with the creamy sauce. Sprinkle with red pepper flakes if desired for extra heat. Cook for an additional 2 minutes to heat everything through.

Step 5: Garnish and Serve
Garnish with fresh cilantro. Serve the creamy shrimp and pepper stir-fry over cooked rice or noodles.
