Cowboy Butter Chicken Skewers🍗🌿
Recipe
Ingredients:
8 wooden skewers, soaked in water for 30 minutes
2 boneless skinless chicken breasts (about 1 pound), cut into 1-inch cubes
1 tablespoon extra virgin olive oil
1 teaspoon kosher salt
½ teaspoon black pepper
½ cup cowboy butter, melted
Fresh parsley, chopped for garnish


Directions:
In a large bowl, combine chicken, oil, salt, and pepper. Toss to coat thoroughly.
Thread 4-5 chicken cubes onto each soaked skewer, ensuring a small space between each cube.
Air fry at 400°F for 11-12 minutes, flipping halfway through, until chicken reaches an internal temperature of 165°F.
Remove the skewers from the air fryer and arrange on a serving platter.
Generously drizzle or brush with melted cowboy butter and garnish with chopped parsley.

6 tablespoons melted grass-fed butter
Juice and zest of half a lemon
4 cloves garlic, minced
1 tablespoon Dijon mustard
Pinch of cayenne pepper
1/4 teaspoon paprika
2 tablespoons freshly chopped parsley
1 tablespoon freshly chopped chives
2 teaspoons minced thyme
1/4 teaspoon crushed red pepper flakes
Salt and freshly ground black pepper to taste
Directions:
In a small bowl, combine melted butter, lemon juice, garlic, mustard, cayenne, and paprika. Whisk thoroughly with a small metal whisk or fork.
Stir in the parsley, chives, thyme, and red pepper flakes. Season with salt and black pepper to taste.
