🍪 Cookie Monster Cheesecake Bites 🍰
Adorable and delicious cheesecake bites with a fun Cookie Monster theme, perfect for parties or a sweet treat.
Ingredients:
Crust:
1 cup graham cracker crumbs
2 tbsp unsalted butter (melted)
Cheesecake Filling:
16 oz cream cheese (softened)
1/2 cup granulated sugar
1/2 tsp vanilla extract
2 large eggs
1/2 cup sour cream
1/4 cup heavy cream
Blue food coloring (as needed)
1/2 cup mini chocolate chips
Topping:
1/2 cup whipped cream
1/4 cup crushed chocolate chip cookies
Mini chocolate chip cookies for garnish


Directions:
Prepare Crust:
Mix graham cracker crumbs and melted butter until well combined.
Press mixture into the bottoms of silicone cupcake molds or a greased mini cheesecake pan.
Make Cheesecake Filling:
In a large bowl, beat the cream cheese until smooth.
Add granulated sugar and vanilla extract, and mix until well combined.
Beat in the eggs one at a time, then add sour cream and heavy cream.
Add blue food coloring until the desired color is achieved.
Fold in mini chocolate chips.
Fill Molds:
Pour the cheesecake mixture over the prepared crusts in the molds.
Cook in Instant Pot:
Add 1 cup of water to the Instant Pot and place the trivet inside.
Arrange the molds on the trivet.
Close the lid and set the Instant Pot to high pressure for 10 minutes.
Allow natural release for 10 minutes before carefully releasing any remaining pressure.
Cool and Set:
Remove the cheesecake bites from the Instant Pot and let them cool to room temperature.
Refrigerate for at least 2 hours or until fully set.
Add Toppings:
Top each cheesecake bite with a dollop of whipped cream.
Sprinkle with crushed chocolate chip cookies.
Garnish with mini chocolate chip cookies.

Tips:
