Classic Raisin Spice Cake 🍰🍇✨
📋 Ingredients:
1 cup raisins
1 cup boiling water
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup chopped walnuts or pecans (optional)
Powdered sugar for dusting (optional)


📝 Instructions:
1️⃣ Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
2️⃣ In a heatproof bowl, combine raisins and boiling water. Let soak for 10 minutes, then drain and set aside.
3️⃣ In a mixing bowl, cream together softened unsalted butter and granulated sugar until light and fluffy.
4️⃣ Beat in eggs, one at a time, until well incorporated. Stir in vanilla extract.
5️⃣ In a separate bowl, sift together all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground cloves, and salt.
6️⃣ Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
7️⃣ Fold in soaked raisins and chopped nuts (if using) until evenly distributed in the batter.
8️⃣ Pour the batter into the prepared baking pan, spreading it out evenly.
9️⃣ Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
