Chicken with Braised Tomatoes and Burrata

Tender Chicken in Braised Tomato Sauce with Creamy Burrata

Ingredients:

4 boneless, skinless chicken breasts
Salt and pepper, to taste
2 tablespoons olive oil
4 cloves garlic, minced
1 shallot, finely chopped
1 can (14 oz) diced tomatoes
1/2 cup chicken broth
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)
4 oz burrata cheese
Fresh basil leaves, for garnish


Directions:

Season chicken breasts with salt and pepper.
In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook for 4-5 minutes per side until golden brown. Remove from skillet and set aside.
In the same skillet, add minced garlic and chopped shallot. Cook for 2-3 minutes until softened and fragrant.
Stir in diced tomatoes (with juices), chicken broth, dried oregano, and red pepper flakes. Bring to a simmer.
Return chicken breasts to the skillet, nestling them into the tomato mixture. Cover and simmer for 15-20 minutes, or until chicken is cooked through and tender.
Just before serving, tear burrata cheese into pieces and place on top of the chicken and tomato sauce. Cover the skillet for 1-2 minutes until the burrata starts to melt.
Garnish with fresh basil leaves before serving.
