📋 Ingredients:

🫒 1 tablespoon olive oil
🧅 1/2 medium onion, chopped
🍅 3 cups chicken broth
🌶️ 2 (10 oz) cans Ro-tel diced tomatoes & green chilies with juices
🫘 1 (14 oz) can black beans, drained & rinsed
🌽 1 (12 oz) can corn, drained
🌶️ 1/2 red bell pepper, chopped
🌶️ 1 tablespoon chili powder
🧄 1 teaspoon garlic powder
🌶️ 1 teaspoon ground cumin
🌶️ 1 teaspoon smoked paprika
🧀 8 oz cream cheese, softened
🍗 2 cups cooked/rotisserie chicken, shredded
🧂 Salt & pepper to taste
🥑 Toppings (optional): shredded Mexican cheese blend, avocado, cilantro, tortilla strips


📝 Instructions:

1️⃣ Sauté the onion in olive oil over medium-high heat for 5 minutes. 🧅
2️⃣ Add all ingredients except cream cheese, chicken, salt & pepper. Bring to a boil, then simmer gently for 5 minutes. 🍲
3️⃣ Add cream cheese, stirring until melted. 🧀
4️⃣ Stir in chicken, cook until warmed through. 🍗
5️⃣ Season with salt & pepper, serve with toppings as desired. 🥑
