Chicken Satay Skewers with Peanut Sauce

Ingredients:

For the Chicken Satay:

1 lb (450g) chicken breast, cut into thin strips
2 tbsp soy sauce
2 tbsp fish sauce
1 tbsp brown sugar
2 tbsp lime juice
1 tbsp curry powder
1 tsp ground coriander
1 tsp turmeric powder
2 cloves garlic, minced
1 tsp fresh ginger, grated
1 tbsp vegetable oil
Wooden skewers, soaked in water for 30 minutes
For the Peanut Sauce:

1/2 cup creamy peanut butter
1/4 cup coconut milk
2 tbsp soy sauce
1 tbsp lime juice
1 tbsp brown sugar
1 clove garlic, minced
1 tsp fresh ginger, grated
1 tsp red curry paste (optional, for extra heat)
Water, as needed to thin the sauce


Instructions:
1. Marinate the Chicken:

In a large bowl, mix the soy sauce, fish sauce, brown sugar, lime juice, curry powder, ground coriander, turmeric, minced garlic, grated ginger, and vegetable oil.
Add the chicken strips to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
2. Prepare the Peanut Sauce:

In a medium bowl, combine the peanut butter, coconut milk, soy sauce, lime juice, brown sugar, minced garlic, grated ginger, and red curry paste (if using).
Whisk until smooth. Add water, one tablespoon at a time, until the sauce reaches your desired consistency. Set aside.
3. Cook the Chicken Satay:

Preheat a grill or grill pan over medium-high heat.
Thread the marinated chicken strips onto the soaked wooden skewers.
Grill the skewers for about 4-5 minutes on each side, or until the chicken is cooked through and slightly charred.
4. Serve:

Serve the chicken satay skewers hot, with the peanut sauce on the side for dipping.
Garnish with chopped fresh cilantro and lime wedges if desired.
