Cheesy Meatballs and Shells Casserole
Hearty Cheesy Meatballs and Shells Casserole
Ingredients:
1 lb ground beef
1 small onion, chopped
2 cloves garlic, minced
1 cup Italian bread crumbs
1 egg
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
3 cups uncooked shell pasta
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups beef broth
1 cup heavy cream
2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
Fresh parsley, chopped (optional for garnish)


Directions:
Preheat the oven to 350°F (175°C). Spray a 9×13-inch baking dish with nonstick spray.
In a large bowl, combine the ground beef, chopped onion, minced garlic, bread crumbs, egg, Parmesan cheese, Italian seasoning, salt, and pepper. Mix well and form into 1-inch meatballs.
Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides. Remove the meatballs and set aside.
Cook the shell pasta according to package instructions. Drain and set aside.
In the same skillet, melt the butter over medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the beef broth and heavy cream. Bring to a simmer and cook until the sauce thickens.
Stir in the mozzarella cheese and 1/2 cup of the cheddar cheese until melted and smooth.
Add the cooked pasta and meatballs to the sauce, stirring to combine.
Pour the mixture into the prepared baking dish. Top with the remaining cheddar cheese.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Garnish with chopped fresh parsley if desired. Serve hot.
