🌶️ Caldillo de Chile Verde 🍲
📋 Ingredients:
1 pound (450g) pork meat, cut into chunks
4 tomatillos, washed and quartered
4 poblano peppers, roasted, peeled, and seeded
1 white onion, chopped
2 cloves garlic, minced
2 medium potatoes, peeled and diced
4 cups (960ml) chicken broth
1/4 cup (15g) fresh cilantro, chopped
Salt to taste
Vegetable oil
📝 Instructions:
1️⃣ In a large pot, heat a little vegetable oil over medium heat.
2️⃣ Add the chopped onion and minced garlic, and cook until soft and fragrant.
3️⃣ Add the chunks of pork meat and cook until browned on all sides.
4️⃣ Add the tomatillos and roasted poblano peppers to the pot. Cook for a few more minutes.
5️⃣ Pour the chicken broth into the pot and add the diced potatoes.
6️⃣ Let the broth come to a boil and then reduce the heat to low. Simmer for about 30-40 minutes, or until the meat is tender and the potatoes are cooked.
7️⃣ Taste and adjust the seasoning with salt as needed.
8️⃣ Just before serving, sprinkle the chopped fresh cilantro over the Caldillo de Chile Verde.
📝 Notes:
◻️ This dish is delicious served with white rice or warm tortillas.
◻️ For an extra kick of heat, you can add serrano or jalapeño peppers along with the poblano peppers.
