Dive into a bowl of Rice and Broccoli Stir-Fry—a savory blend of rice, colorful vegetables, and eggs, seasoned with soy sauce, ginger, and more. Quick, easy, and bursting with flavor!

Ingredients:
• 1 cup rice
• Olive oil
• Salt
• 2 glasses of water (approximately 400 ml)
• 1 carrot, diced
• Ginger, grated
• Mushrooms, sliced
• Chives, chopped
• 5 eggs, beaten
• Broccoli, cut into florets
• 3 tablespoons soy sauce
• 1 red pepper, diced
• 1 tablespoon ketchup
• 1 tablespoon mayonnaise
• Black pepper
• 1 garlic clove, minced
• Dill, chopped (optional for garnish)



Instructions
1. Cook the Rice:
• Bring water to a boil in a medium pot. Add salt and rice. Simmer, covered, until rice is tender and water is absorbed (about 18-20 minutes). Set aside.

2. Prepare the Vegetables:
• Heat olive oil in a large skillet or wok over medium heat. Sauté diced carrot until slightly tender.
• Add broccoli florets and diced red pepper. Cook until just becoming tender.
• Stir in sliced mushrooms and grated ginger, cooking until all vegetables are tender but still crisp.

3. Make the Egg Mixture:
• Beat eggs with soy sauce, ketchup, and mayonnaise in a bowl to create a flavorful base.

4. Combine Ingredients:
• Push vegetables to the side of the skillet. Pour egg mixture into the center, allowing it to set slightly before mixing with vegetables.
• Add cooked rice, mixing thoroughly with vegetables and egg. Fry together for a few minutes.

5. Season the Dish:
• Add minced garlic and season with salt and black pepper to taste. Stir-fry for an additional minute or two.

6. Garnish and Serve:
• Remove from heat. Sprinkle with chopped chives and dill for extra flavor and color.
