Broccoli Cheese Soup in Bread Bowls
Ingredients:
1 large head of broccoli, chopped
2 cups vegetable broth
2 cups milk
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1 medium onion, chopped
2 cloves garlic, minced
1/4 cup butter
1/4 cup all-purpose flour
Salt and pepper to taste
4 large bread bowls
Directions:
In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, cooking until the onion is translucent.
Stir in the flour to make a roux and cook for about 2 minutes.
Gradually add the vegetable broth and milk, whisking continuously to avoid lumps.
Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
Add the chopped broccoli and cook until tender, about 10 minutes.
Stir in the cheddar and Parmesan cheeses until melted and the soup is smooth.
Season with salt and pepper to taste.
Hollow out the bread bowls and ladle the hot soup into each bowl
