Lemon Bar Cookie Cups

📋 Ingredients:
🧈 1 cup (2 sticks) unsalted butter, softened
🥚 2 large eggs
🍚 2 cups all-purpose flour
🍯 1/2 cup honey
🍋 2 lemons, juiced and zested
🍬 1 1/2 cups granulated sugar
🥛 1/4 cup milk
🧂 1/2 teaspoon salt
🥧 1 package refrigerated sugar cookie dough
📝 Instructions:
1️⃣ Preheat oven to 350°F (175°C). Grease a mini muffin tin with non-stick cooking spray. 🍽️
2️⃣ In a large bowl, combine the sugar cookie dough and 1/4 cup of flour until well mixed. Press about 1 tablespoon of dough into each muffin cup, forming a mini tart shell. 🍪
3️⃣ In another bowl, beat together the softened butter, sugar, and salt until light and fluffy. Add in the eggs, one at a time, mixing well after each addition. Stir in the lemon juice, lemon zest, honey, and milk until combined. 🍋🥚
4️⃣ Spoon about 1 tablespoon of lemon mixture into each prepared cookie cup. Bake in the preheated oven for 15-18 minutes, or until the edges are lightly golden brown. Allow to cool completely in the muffin tin before removing. 🕒🍋
