Mediterranean-Inspired Cobb Salad with Fresh Veggies and Feta
Ingredients:

4 cups mixed greens (arugula, spinach, romaine)
1 cup cherry tomatoes, halved
1 cucumber, diced
1 red bell pepper, diced
1/2 red onion, thinly sliced
1/2 cup Kalamata olives, pitted and halved
1/2 cup crumbled feta cheese
1 avocado, sliced
2 hard-boiled eggs, chopped
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped


Dressing:

1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 garlic clove, minced
Salt and pepper to taste
Directions:

In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red bell pepper, red onion, Kalamata olives, crumbled feta cheese, avocado, hard-boiled eggs, parsley, and mint.
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined.
Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.
