Hearty Tuscan Short Rib Ragu
Ingredients:
2 lbs beef short ribs
2 tablespoons olive oil
1 large onion, chopped
4 cloves garlic, minced
2 carrots, chopped
2 celery stalks, chopped
1 cup red wine
28 oz can crushed tomatoes
3 tablespoons tomato paste
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
Fresh basil for garnish
Grated Parmesan cheese (optional)


Directions:
Set the Instant Pot to sauté mode and heat the olive oil.
Brown the short ribs on all sides, then remove and set aside.
Add onion, garlic, carrots, and celery to the pot and sauté until softened.
Deglaze the pot with red wine, scraping up any brown bits from the bottom.
Stir in crushed tomatoes, tomato paste, thyme, rosemary, salt, and pepper.
Return the short ribs to the pot, coating them in the sauce.
Seal the Instant Pot and cook on high pressure for 45 minutes.
Release pressure naturally, then remove the ribs, shred the meat, and return it to the sauce.
Serve garnished with fresh basil and grated Parmesan, if using.
