Slow Cooker Loaded Mashed Potatoes
Ingredients
2.5 pounds red potatoes, cut into one-inch pieces
1 cup low sodium chicken broth
4 tablespoons butter
Salt and pepper, to taste
½ cup milk
1 cup shredded cheddar cheese
¼ cup sour cream
4 strips Cured meat, cooked and diced into small pieces


Instructions
Grease the bottom of the slow cooker with cooking spray or a little oil.
Add the potatoes, chicken broth, butter, salt, and pepper.
Place the lid on and cook on high for 4 hours or low for 6 hours, until the potatoes are very tender.
Remove the lid and mash the potatoes until creamy using a potato masher or an electric hand mixer on low speed.
Stir in the milk until combined.
Add the cheese, sour cream, and Cured meat, stirring to mix thoroughly.
If not serving immediately, set the slow cooker to “warm” until ready to serve.
Top with more shredded cheese and scallions, if preferred.
Tips for Perfect Slow Cooker Loaded Mashed Potatoes
Potatoes: Red potatoes are great, but you can also use Yukon Gold or russet potatoes for a different texture and flavor.
Cheese: Feel free to experiment with different types of cheese like Monterey Jack, Colby, or a cheese blend.
Additional Toppings: Customize your mashed potatoes with green onions, chives, or even a dollop of extra sour cream on top.
Consistency: For a smoother texture, add more milk or chicken broth as needed when mashing the potatoes.
