Hearty Slow Cooker Beef Stew with Fluffy Dumplings
Ingredients:
For the Beef Stew:
2 lbs beef stew meat, cut into bite-sized pieces
1/4 cup all-purpose flour
Salt and pepper to taste
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
4 cups beef broth
2 tablespoons tomato paste
2 teaspoons Worcestershire sauce
4 carrots, sliced
3 potatoes, peeled and cubed
2 celery stalks, chopped
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 bay leaf
Fresh parsley, chopped (for garnish)
For the Dumplings:
1 1/2 cups self-rising flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon dried thyme
1/2 teaspoon dried parsley
3/4 cup milk
4 tablespoons unsalted butter, melted


Directions:
In a large bowl, toss the beef stew meat with the flour, salt, and pepper until evenly coated.
Heat the olive oil in a large skillet over medium-high heat. Add the beef and brown on all sides, about 5-7 minutes. Transfer the browned beef to the slow cooker.
In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant. Transfer the onion and garlic to the slow cooker.
Add the beef broth , tomato paste, Worcestershire sauce, carrots, potatoes, celery, dried thyme, dried rosemary, and bay leaf to the slow cooker. Stir to combine.
Cover and cook on low for 8-10 hours, or on high for 4-6 hours, until the beef is tender and the vegetables are cooked through.
About 30 minutes before serving, prepare the dumplings. In a medium bowl, whisk together the self-rising flour, salt, baking powder, dried thyme, and dried parsley. Stir in the milk and melted butter until just combined.
Drop spoonfuls of the dumpling dough onto the surface of the stew. Cover and cook on high for 25-30 minutes, or until the dumplings are cooked through and fluffy.
Remove the bay leaf and discard. Serve the beef stew hot, garnished with fresh chopped parsley.
